Wood-fired Neapolitan pizza with bubbling crust

Naples Never
Left the Fire

Real wood, real dough, real Naples. Every pizza at Da Carlo is fired for ninety seconds in a hand-built oven, the way it's been done south of Vesuvius for two hundred years — now on a quiet corner in Budapest.

Our Story

A Naples Kitchen
Carried Into Budapest

Carlo learned to turn dough before he learned to read a menu — in his uncle's pizzeria in the Sanità district of Naples, where the oven was older than anyone working the counter. He brought that same oven's blueprint to Budapest in 2014, brick by brick, and lit it the same week the doors opened.

Nothing here is shortcut. The flour comes from Caputo in Naples, the tomatoes are grown in the volcanic soil of San Marzano, and the dough rests for two full days before it ever sees the fire. What we serve is not "inspired by" Naples — it is Naples, cooked the way it has always been cooked.

The Signature Experience

What Makes a Pizza
Truly Neapolitan

Four things separate a real Neapolitan pie from an imitation. We hold to all four, every single night.

Il Forno

The Wood-Fired Oven

Built from Vesuvian brick and fired with beech wood to 485°C — hot enough to cook a pizza in ninety seconds flat.

L'Impasto

The 48-Hour Dough

Made fresh each morning from Caputo 00 flour and left to ferment slowly for two full days before it's stretched by hand.

Gli Ingredienti

Imported, Not Local

San Marzano tomatoes, fior di latte, and Parma prosciutto arrive weekly from the same regions that gave them their names.

Il Pizzaiolo

Chef Craftsmanship

Every pie is shaped, topped, and fired by hand by a pizzaiolo trained under the same Naples tradition Carlo learned from.

Poured From
the Same Regions

Our list stays small on purpose — every bottle is chosen from the same regions our ingredients travel from, so the glass in your hand always matches the plate.

I
Chianti Classico DOCG
A structured Tuscan red, poured with the ragù dishes and anything off the grill.
II
Primitivo di Manduria
Bold and dark-fruited from Puglia's heat — the house favourite with the Diavola.
III
Falanghina del Sannio
A crisp Campanian white grown minutes from where our tomatoes come from — the natural pairing for seafood pasta.
IV
Prosecco di Valdobbiadene
Light and dry, served chilled to open the evening or close it with dessert.
